Whenever I travel, I seek out a food tour. It is such a delight to get to know a place through its foodways. Learning about eating habits and culinary practices is a great way to connect to a new place. Typically, it's a walking tour with a local guide and last most of an entire day. Tucking into local restaurants, we share a table of dishes while hearing why they important to its people. On one walk through old Istanbul, we passed through a neighborhood outdoor fish market, and I found myself taking pictures of the glistening fresh fish in a large bucket. Little did I know that we'd encounter this very same type of fish less than a quarter hour later. These Turkish anchovies, or hamsi, are a seasonal delicacy -- and clearly it was in season. We all ate the simple dish of whole fried fish with big chunks of sea salt and a squeeze of fresh lemon while balancing precariously on our upside-down bucket seats. What a celebration of perfect timing!
